Cashew Pilaf

Ingredients

4 C. water

2 C. long grain rice, rinsed and drained

1/2 tsp salt

2 tbsp vegetable oil, divided

1/4 C. coarsely chopped cashews

7 small dried chile peppers

1 tsp mustard seed

1 tsp cumin seed

10 fresh curry leaves

1 tsp ground turmeric

1/4 C. fresh lime juice

2 tbsp tamarind paste

1 C. plain yogurt

Directions

In a pot, add the water and cook until boiling.

Add the salt and rice and stir to combine.

Set the heat to low and with a id cover the pan.

Cook for about 20-22 minutes.

Meanwhile, in a frying pan, add 1/2 tbsp of the oil over medium heat and cook until heated.

Stir in the cashews and cook for 5 minutes.

Transfer the cashews into a bowl and keep aside.

In the frying pan, add the remaining oil over medium heat and cook until heated.

Stir in the cumin seeds, mustard seeds and chile peppers and stir fry for about 30 seconds.

Stir in 1/2 of the cashews and curry leaves and stir fry for about 3 minutes.

Remove the rice from the heat and stir in the tamarind paste, lime juice and turmeric.

Now, place onto a platter and stir in the oil mixture.

Serve with a garnishing of the remaining cashews.
